Who We Are

Who We Are

Millie's & Chef Zachary Belli

Food has always been at the center of my life—but not just as a meal. For me, it’s about connection, love, and legacy. This food truck represents my family’s opportunity to give back—because in the past, I wasn’t always in a place to. Now, I can. I was born and raised in eastern MA, surrounded by strong Portuguese roots and even stronger home cooking. I grew up watching my grandmother fill the kitchen with the smell of wine, fresh seafood, and soulful, simple meals that brought everyone to the table. That’s where I first saw the power of food—not just to nourish, but to bring people together. When I felt the call to explore beyond my hometown, I joined the U.S. Marine Corps, serving for nine years as a helicopter crew chief and air traffic controller. After the military, I followed my passion for food and earned my culinary degree in San Diego, CA. I worked in kitchens across the country, learning from incredible chefs and exploring diverse culinary styles—but nothing ever replaced the soulful touch of home. Now living in Middle TN with my family, this business is a tribute to my grandmother, who showed her love through food. Though she’s no longer with us, her spirit lives on in every dish we serve. She taught us that family isn’t just blood—it’s everyone you welcome to your table. A huge influence on my outlook—both in the kitchen and in life—has been Anthony Bourdain. His raw honesty, love of culture, and refusal to sugarcoat anything is something I’ve always admired. I try to bring that same realness into my work: no frills, just flavor. No ego, just heart. As we continue this journey, we hold tight to one simple truth: “Stay true to who you are. chase your dreams relentlessly—and never let the noise of the world drown out your own voice.”  This isn’t just a food truck. It’s our way of giving back. Of honoring where we came from. Of creating something real and lasting—one plate, one story, one connection at a time.  Obrigado.
